I've used Xplay to do that.
The iPod actually has quite good reproduction quality,
particularly when driving what is known as a line level
input. On the worst day of your life you can re-record music
from the iPod's headphone jack. If you skillfully apply
really good recording equipment you will get at worst,
acceptable results. However, you won't get back a MP3,
you'll get a .wav file.
