My favorite video podcast is RocketBoom. You can find it on iTMS.
There are a variety of options for recording TV shows and transferring
them to the iPod, I mostly use a PCI card on my Mac AlchemyTV:

There are a variety of 3rd party USB and FireWire boxes as well.
Of course if you have digital cable, you can ask your cable company for
a box that has FireWire output. This will connect directly to your Mac
and allow you to record shows that can put transferred to the iPod.
EyeTV is a really nice product and the same company sells EyeHome which
is a $99 box which allows you to watch/listen to audio/video/picture
content from your Mac via Ethernet or WiFi on your TV/Home Theater. It
integrates with iTunes/iPhoto. I can't believe how cool this product
is for only $99. The interface is clunky, but it works *very* well.
Another good source of course are the P2P networks, especially
BitTorrent sites. More and more content is being shared in ".iPod"
format. Most sites let you search and you can enter iPod in the field
to see what's available. There's plenty of legally free video content
being shared, so don't think these sites are only for pirates.
I take the train to work each day for a total of 2 hours. For the most
part I download RSS news and weather feeds as well as audio podcasts
each day. One feature that I love is the ability to fast play Audio
Books. I have my Mac automated to record audio-only of news shows like
The Factor, and then save them as Audio Book AACs and import them into
iTunes. When they're synched to the iPod, I can then listen to a 1
hour show in less than half the time.
I think given time, more video podcasts will start to emerge. It's a
hell of a lot more expensive and time consuming than audio, and the
audience is much smaller (for now).
