Sure. You could even use one drive. It comes down to tradeoffs.

Depends on what you are doing. If you do mostly capture, edit, and
then write back to tape, a 3rd drive may not buy you anything.
But if you do a lot of converting one video/audio file type to another
(like mastering for DVDs, or converting to WMV for web pages, etc.
etc.) then having two media discs will both speed up the process AND
reduce the wear-and-tear on the drives.
