I am going to assume that your machine uses +R and +RW? From my
understanding +RW don't need to be finalized, though obviously you'll
have to play them in a +RW compatible player. If it were -RW you would
need to finalize it to play on another machine then format it to
record on it again.
As for the removing a disc before it is full, as long as it isn't
finalized you can remove a -R or +R disc, use the machine for
something else, then when you put the unfinished disc back in you can
carry on where you left off until you finalize. What you can't do with
a -R or +R is record over the stuff on it, which is where the RW discs
come in. On those you can record over stuff just like a VCR. Some
machines will allow you to delete things randomly and you'll gain all
the space back, some will only allow you to delete from the last thing
recorded to gain space back.
It all sounds a bit complex at first but gets easier as you get used
to it.
