My mother has the same problem since getting her new (cheap) vcr. Normally
she has everthing tuned to channel 1 on the telly, but when she records, the
image is distorted on channel 1 as you describe. If she sets it to EXT1
(scart), it shows fine. It does record ok (ie. playback is not distorted),
but having to explain to her (every time she is recording anything) is a
pain. As above, this happens when viewing/recording 'analogue' cable. She
doesn't have satellite, nor does she view via "terrestrial" channels.
....I've tried getting her to watch EXT1 as normal, but once the vcr is
switched off -for whatever reason- she's back on the phone wondering why she
can't get any reception on the telly.

It never happened on the old vcr. I don't have an explanation, but you are
not alone. Hopefully someone here will make sense of it.

(I can't recall which vcr it is).
