They didn't. They recorded the information of which notes to play.
YOU had to provide the instrument. If all you have available is the
built-in synth in Windows, you'll recognise that it IS a piano, and
what the tune is. If you provide an expensive and large multi-sampled
"virtual piano" and have good speakers, it can be pretty realistic.
But all MIDI is providing is the piano-roll. It's your job to insert
it into a rattletrap pub piano or a Steinway grand.
