Whether or not that's a good practice will depend on the encoder.
In LAME, with the exception of some rare source material (for example
2ch surround), it's always best to use Joint Stereo. Even at 320kbps. At
such a high bitrate I'll admit that its benefit is marginal... but it
still exists, and it does no harm.
Actually with LAME I recommend stick with the defaults. They're the
defaults for a reason.
