The established solution I was looking for is *spring*!

What is a decent head with counterbalance for 3lb (current camera) to 5 lb
(future) camera?
I guess there is a dial to set the camera weight. That's one step. What does
it mean to have 2 step, or 3 steps counterbalance?

If I really want to persue this, I could use two weights on a fork to avoid
the legs.
