They encode it badly.
What I mean is, if you pop a CD in your drive, and use iTunes to make a
set of MP3's from it and a set of AAC's from it, the AAC's will sound
much better. Why? Apple will have you think that it's because AAC is
waaay better. It's really just because the MP3's iTunes makes are
absolutely crummy compared to the ones a good encoder like LAME will make.
You'd be surprised at the quality LAME can give you maybe even at 128kbps.
