Your goals suggest more of a PRODUCTION type solution:

The easiest way to accomplish a good quick master is to live Switch

your cameras: Run all of the video signals from your cameras into a
switcher

preferably firewire and then switch between them onto a Video recorder ---
all done in real-time.

Roll tapes in each camera for backups and to fix mistakes later.

Another option is to get a Newtek Video Toaster which will do all of the
above

as well as allow you to Stream the output etc.. and Edit your footage
without having to transfer any material

to another system.
