Although component video is theoretically better than S-Video you probably won't see any difference. Many people seem to be oblivious to poor resolution and NTSC artifacts and can't even tell the difference between composite video and S-Video.
Interlacing reduces flicker at relatively low frame rates e.g. broadcast at 30 frames per second and increases brightness on a CRT. Non-interlaced video does not have these problems if the frame rate is high enough.
