By numbering them. As Hu Ru said.
If you want to make an audio CD - one that will play for 70-80 minutes - you
can drag the files around to the sequence you want on your burner's window.
However, if you want to make a data disc - the only kind you can make with
MP3 files keeping them *as* MP3 files - they have to be numbered to play in
order; moreover, you have to play them in a device capable of decoding them
to wave as they are being played; a standard, plain-jane CD player can't do
that.

You can only record in wave. That wave may be encoded to MP3 either
simultaneously with the recording or later. Keep in mind that wave files
are very large.
