Richard is right, break it into segments:
you'll get better audience comprehension and you won't face possible
computer system issues from playing back massive video projects and effects

I recently completed a four and a half hour instructional dvd set for a
corporate client where, in order to hold onto eveyone's sanity, I broke
it down into modules that ran about 30 minutes each. --- your material
may warrent different timings, but people can only stand so much
powerpoint and chalk talking. The fact that the DVD format gives you
random access and better info organization really helps with your
project objectives.

Having a beefy computer system to run your software helps too. So does
frequent project saving and backups.
