Acid is used more for doing remixes or creating songs from scratch
using loops [in my experience with the sofware].
It's pretty difficult to do straight track editing, I've found.
Acid is almost akin to FruityLoops/FL Studio in that regard - not much
good if you've got a bunch of long audio. Although fades in Acid
aren't that bad to do, it's just the project setup that will be
somewhat time consuming.
Audition's much the same other non linear multitrack editing software,
I've found.
Lately I've been using Cubase SX. Does anything you could ever imagine
needing to do, but to come to my mediocre level of profiency with the
software it's taken 3 video training CDs.
There's manuals, of course.
Another one like SoundForge that you may find more intuitive is
GoldWave, which is two-channel waveform editing as well.
