There are the low-end DVD recorders which mostly can do
great "crash-editing" (start/stop via Pause button). But if you
want to go back and reset the edit point, you may want to look
at the kind that initially record to an internal hard drive, because
they let you then to back and choose the edit point(s) and then
write the disc in a subsequent step. They should theoretically
do what you are seeking, but I have not personally used them
to do that.
