The most common spam these days is a HTML message with a gif file displaying
the actual spam and a bunch of random text hidden in the source code to try
and fool mail filters that do text analysis.

If you have emails set to display in plain text only then you'll just get
the gibberish , and quite often the spammers haven't got the hand of their
spam-bots and send out "broken" emails all by themselves
