The YUV component connection from your camera will look fine, but the
projector will be downscaling the camera's output quite a bit because it's
only 1024x576 native.
I'd try to to find a projector with at least 1280x720. There are plenty
of them at decent prices.

There are some somewhat better projectors at 1366x768.
