Ron, I have been able to read from and write to RAM disks on my Pioneer
DVR-110 and 111 models.
However there are a few points you want to consider, plus my experience with
this only relates to the above burners:
Windows 2000: I did not get the special drivers to work, which I needed for
the writing process.
WindowsXP - possible to read and write.
WindowsXP by default can read contents of RAM disks, but when writing, uses
a different format (packet-writing[?]), which is ok for storing PC data for
backups, but your Panasonic standalone can't read it.
You need a special RAM driver for that, which will make that possible.
You CANNOT run (install) InCD (from Nero) at the same time.
It took me many months to find this driver, but it works on my setup.
sl25dvdramx.exe , Version 5.0.1.8
68 MB = a big download.
Its made by and for Toshiba, but also works on the 2 above Pioneer models.

To your other question:
You can edit everything on your PC and then save it back, of course, just
use your usual PC software.
for movies (DVD), use your mpeg editors and DVD authoring programs.
If you're new to this, there's quite a bit of information available on the
net.
