I'm assuming by "cinch" you mean RCA. In which case, yeah, using an
adapter is the best way (certainly in terms of simplicity). Fiddle with
the MP3 players volume control so that it sounds about as loud on the
amp as any CD player, etc. plugged into it (no louder). That way you can
be pretty certain that the signal won't clip at the amp's input when it
gets loud.

Sorry, I don't know of any portable players that are made especially to
be used with an external amp. Rather, there are home stereo components
you can buy which are basically MP3 players that you can transfer music
to using your home network.
