When you connect you iPod to the computer iTunes will open at the iPod
summary page. There are several tabs at the top of the screen, Summary,
Music, Movies, TV Shows etc. Click on a tab then uncheck the Sync
option. Do that for all the types of media you want to Sync manually by
going to the relevant tab and unchecking Sync its sync option.
Uploading is simply a case of selecting the tracks from the list view or
even dragging an album cover from the cover view area to the iPod icon
in the devices area of the blue column on the left of the iTunes window.
To delete from the iPod just click on Music (under the iPod icon) and
the tracks will be displayed in list view. Select the tracks by the
usual means, cmd-click for multiple or shift-click for a range, then hit
delete. Job done..
