Those options are offered in the initial install - from memory it's an
optional step to accept QT's idea of what to associate, or to click a
button at the end of the install to setup MIME types.
MIME types are specifically browser settings to do with the QT plugin
- there's a separate set of File Type settings which work with locally
opened files.

It's not really magic, it's just I'm afraid RTFM - although they could
be simpler to set up in the UI, most man-in-the-street users have no
interest in configuring those.
In Quicktime on XP you'd do Edit -> Preferences -> Player Preferences
Then chooose Browser tab and MIME Settings button.
On that page I typically select
All Streaming (top level box checked)
Video - Quicktime Movie, FLC, AVI
Audio - AIFF, uLaw, MIDI, AMR, AAC, GSM, CAF
All MPEG (top level box checked)
MP3 - None checked
Images - Mac, PICT, SGI, JPEG2000
Miscellaneous - SMIL, QTHTML
Then untick 'Notify me' to avoid being bugged all the time.
That's specific to my set of players - I frequently use Real or WMP
for MP3 audio, but to save hassle I prefer QT to handle most MPEG
types. Some of the image types like PNG really should be browser
handled.
You could do the same set of steps in the File Types tab, but more
carefully depending on which video editing tools you have and if you
prefer to play the files when clicked in Explorer, or to open the
editing application.
Real Player, VLC and other players have similar settings, as does WMP
if that's your daily media player.
