On your hard drive, iTunes will try to organise your MP3 collection for you
by default. It uses the ID tags on each file to do this. If your
collection is from, say, your LPs that you've recorded in and named, there
won't be any ID tags for it to find and it'll stick 'em all in one folder
for you.

The way round this is either to turn automatically organising your
collection for you OFF (Edit>Preferences>Advanced and untick "Keep iTunes
music folder organised") or get info on each song (or you can group songs
and change the info for them all in one go (e.g. by album or artist)) and
then let it organise them. It'll stick them in this hierachy: Artist/Album
name/Song. You can use the same preferences tab to change where iTunes will
look for and keep your collection.

It's actually very good if your stuff has ID tags on already.

incidentally, the iPOD itself doesn't store the songs in this way although
it still presents them to you that way. It'll store them with names you do
not recognise and in folders that make no apparent sense. So don't expect
to Explore the iPod drive and make head or tail of it.

You can also use Ephod (free) to sort it for you.
