You could possibly use the pass-thru mode of the camera to capture the
footage directly to the computer. Start and stop for every student so
you have small clips instead of one big file.
You MIGHT even get suitable resolution using a decent web cam. It
really depends on what you are trying to pick up.
Any of the video players should provide a slow motion playback if
required.
