Ya still need to be careful; some traditional songs have been rewritten by
the likes of Ralph Vaughan Williams, and are under copyright as a result.
The meaning of "traditional" is hotly debated in the folklore community;
suffice it to say that it doesn't always mean "unknown author". Oh, and the
authors of "O Little Town of Bethlehem" are known: words by Phillips Brooks,
1867; music by Lewis Redner, 1868. Public Domain.
The Oxford Book of Carols is a good source of Christmas songs as well as
fairly accurate information about authorship.
