Understanding DVD structures?

I am new to editing video vrom DVD and would like to know how the individual
clips are separated in the VOB files.
I had one clip on the DVD worth 10 minutes, but I obtained two VOB files in
the process - each 10 minutes long.

I would like to be able to capture all my camcorder clips to the DVD and
then edit them on the PC and write them back to the DVD.

I have just purchased a DVD rewriter for the PC - Philips DVDR1628K and it
seems up to the job of re-writing.
I just need to learn the basics now of transferring the VOB files to the PC
and then editing and joining them all into one new VOB program and write
them back to the DVD again.

Sounds simple, but I guess I am missing something here.
The software that came with the DVD rewriter was NERO 6.SE
