I can see you directed the question to Mark but hope you don't think I'm
rude jumping in here.

1 - I can't comment on this but....
2 - I don't know what or where your end product is heading but I would make
use of the Z1's 4:3 markers carefully frame your subject in the markers (or
a compromise between 16:9 and 4:3) and shoot in HDV. This will give you two
options, to deliver in widescreen HDV/SD or centre crop the original and
deliver as 4:3 SD.

If you are just going to DVD with the project I would simply edit in HDV,
downconvert to 16:9 SD and burn as a 16:9 DVD. The end user will be able to
choose to view the DVD as either a letterboxed widescreen picture or 4:3 pan
and scanned picture. Because you made use of the 4:3 markers when shooting
everything should be framed nicely for either eventuality.

I wouldn't worry about downconverting for the edit unless your NLE struggles
with HDV. By staying with HDV through the post-production process you'll
reap the benefit when you do the final downconvert for output. Any titles
and graphics retain their quality from this approach.

I don't want to temp the usual pedant but HDV downconversions do have a
habit of looking "filmic."

HTH.
