I've worked with projectors with the freeze as well. It's really handy
for the exact reasons you state.

However, assuming both have IR control, it might be cheaper to add an
infrared extender--either RF or wired--to the projectors and use the
on-board still-store. It would probably be cheaper than adding another
piece of gear to store the image; and assuming both PJ's are identical,
one click would freeze them both.
