The reason why you can watch one analogue channel whilst recording
another is because your TV has an analogue tuner and your recording
device has an analogue tuner!
Now if you had a TV with a digital tuner and a recording device with a
digital tuner, then you would be able to record one digital channel
whilst recording another.
