They aren't. That is why there is a nearly constant struggle
to capture "clean" dialog, especially when shooting on
location. Hang around the film/TV sound newsgroup...
news:rec.arts.movies.production.sound for a few days and
read about it first-hand from the folk on the front lines.

The notion that you can remove noise and leave the speech
intact is a fiction propogated by CSI, et.al.
