CDex and Exact Audio Copy can both do it rather easily.
CDex:
"Convert" -> "Extract a section of the CD".
Exact Audio Copy:
"Action" -> "Copy range".
AudioGrabber can also do it, but it's a little more tricky. It involves
going into the "Track properties" of the last track of the CD, and
writing down the number of the last sector, and then going into the
"Track properties" of the first track and plugging the number into the
last sector field there.
