Ask the event producers what they prefer. That's the best way to begin.

Most projection companies now use some kind of scaling/switching device
ahead of the projector(s) which can resize, correct aspect ratio, crop,
etc., each of its inputs so they all match the screen size and shape.

Another issue - DVDs are generally more difficult to cue up and play if
the show's cues are tight. They might prefer your DV tape instead.
Another thing to ask them...
