Use a multimeter to determine which RCA pins/shields connect to the
respective S-video pins.

I've seen S-video to 2 x RCA configurations where the RCA outputs
correspond to chroma and luminance. In fact I have a Commodore monitor
that has separate chroma and luminance input sockets.
I can only imagine that the third lead may be a composite output
generated from a combination of the two signals via a coupling
capacitor.

Having said that, the latter configuration would make one of the leads
redundant.
