Another option is mount the drives internally but run a switch to turn
power to the drives on and off, this way if you aren't using PC for
editing at the moment, turn switch off, boot up the PC and the sata
controller will not detect the two raid 0 drives and boot up without them.
Using only the one system drive, saving you energy cost, heat build up
and possibly drive wear and tear, since they aren't spinning up at all.
Don't switch them on however while the PC is running unless you have the
controller has hot swap feature, most onboard, don't.
So just reboot with switch on, and the 2 drives will be detected and you
are set for video editing. Simple. No need for external case this way
also. I do something similiar, I have a large SATA drive that I only
turn on and allow to be detected when doing system backups, then run PC
most times with it switched offm not powered up yet all plugged in and
not detected by bios.
You can use a regular radio shack, on/off switch inline with 12v wire,
or a double pole double throw switch to cut both 5v and 12v power going
to internal drive or drives.
And then also you can get same effect using slide out drawer for about
$19, LIKE THIS sata MOBIL RACK
