Apple has the DVHSCap and AVCVideoCap that captures the raw MPEG-TS stream.
MPEG Streamclip can be used to convert to your codec of choice.
iMovie + FCP are designed to split you recordings into one clip for
every time you start/stop revording.

Also heard this recommended on the PC from more sides.
