It is not the height of the celing specifically. It is a combination of...
1) The overall acoustics of the room (not just the ceiling). The
farther away the microphone is from the source, the more you
must deal with the room acoustics (and ambient noise).
2) The notion of fixed-position microphone(s) for a source that
is (presumably?) moving around. Fundamentally problematic.
3) The notion of multiple microphones. Not only how to mix
them down properly, but the apparent extra expense without
a clear return on investment.
4) The notion of trying to select and position shotgun mics in
a place we've never seen/heard (i.e. by "mail-order" via this
newsgroup). This is not an area for a rank amateur with a
selection of one microphone and no experience.
Using a body mic is overwhelmingly ever so much prefered
to booming under these circumstances that it isn't even a
horse-race IMHO. It is the audio equivalent of using multiple
survelience/webcams in fixed positions.
The OP is encouraged to ask his question over in
news:rec.arts.movies.production.sound if he wants the opinion
of people who do this every day for high-visibilty projects.
